Wheat Bread

4 medium loaves


10 to 12 cups whole wheat flour

4 Tablespoon dry yeast

2 cups powdered milk

4 cups warm water

1 cup honey

1/2 cup vegetable oil

2 Tablespoon salt


In a large mixing bowl, combine 6 cups of whole wheat flour, with yeast and powdered milk.  Heat the water, honey, oil, and salt together until warm, stirring constantly. (115 to 120 degrees)  Add to dry ingredients in mixing bowl.  Beat at low speed with an electric mixer for 30 seconds, scraping the sides of the bowl.  Then beat for an additional 3 minutes at high speed.  By hand, stir in enough of the remaining wheat flour to make a soft dough.  Turn out onto a floured area and knead until smooth and elastic, about 5 minutes  Shape into a ball and place in a greased bowl, turning once to grease surface.  Cover; let rise in a warm place until double, about 30 minutes.  Punch dough down, cover, and let rest for 10 minutes.  Divide dough into four equal portions and shape into loaves.  Place in bread pans(8 1/2 x 4 1/2) Cover; let rise until double in a warm place, for 20 minutes.  Bake in a pre-heated 350 degree oven for 35-40 minutes.  Remove from pan and coool on wire rack.



Sticky Apple Cinnamon Rolls/Buns

Makes 30 slices


1 Tablespoon dry yeast

1/4 cup water

1 cup milk, scalded

2 Tablespoons honey

2 Tablespoons vegetable oil

1 teaspoon salt

1 egg

1/2 cup frozen apple juice

1/2 cup honey

1/4 cup melted butter

2 teaspoons cinnamon

3 large apples

2 Tablespoons vegetable oil

4 cups whole wheat flour


Combine the yeast with 1/4 cup warm water.   In a large bowl, combine heated milk, oil, honey and salt.  Add 1 cup of flour and beat well.  Beat in the egg and the yeast.  Gradually add the remaining flour, stirring as long as you can.  Knead the dough in the bowl. Remove ball of dough from the bowl. Wash, dry, and oil the bowl.  Place dough back in the bowl, turnin it once to oil the top.  cover and place in a warm area to rise for 1 hour or until doubled in size. Combine the honey, apple juice, melted butter, and cinnamon in a 9x13 pan and stir together.  Add thin apple slices, and stir to coat them in the honey mixture.  Once dough has risen turn out onto an oil area. Coat your hands with oil too. Cut the dough in half.  Press into a rectangle, about 16 x 18".  Cover the rectangle with half of the apple slices, leaving the honey mixture still in the pan.  Roll up lengthwise and press edges to seal.  Cut into 1" slices and place in greased baking pans. Repeat for the other half of the dough.  Drizzle the honey mixture evenly over all the apple cinnamon slices.  Cover and return to your warm spot to let rise for approximately 30 minutes.  Bake at 350 degrees for 25 minutes until lightly browned.  Remove from pan and enjoy.



Applesauce Bread

1 loaf of Bread


1 cup unbleached white flour

2 cups whole wheat flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon salt

1/2 teaspoon cinnamon

2 cups walnuts or other nuts, optional

1 1/4 cups applesauce

2/3 cups honey

2 Tablespoons oil

1/4 cup orange juice

1 egg, beaten


Mix all dry ingredients(including nuts) in a large bowl. Make sure dry ingredients are incorporated good.  Make a well in the center and add the applesauce, honey, oil, orange juice, and beaten egg.  Stir into dry ingredients by folding over.  Do not stir too long. Stir only until dry ingredients are all moistened. Pour into a greaded loaf pan.  Bake at 350 degrees for about 1 hour or unti bread is done.



Blueberry Muffins

12 muffins


1/2 cup honey

1/3 cup butter, softened to room temperature

2 eggs, beaten

2 cups unbleached flour

2 1/2 teaspoon baking soda

1/2 cup milk

1 1/2 cup blueberries, preferrably fresh if available


In a mixing bowl, cream together the honey and softened butter.  Add beaten eggs and beating until smooth.  In another bowl, stir the flour, and baking soda together making sure no lumps of baking soda remain.  Add the milk alternately with the dry ingredients to the honey batter.  Fold in the blueberries.  Spoon batter into greased muffin tins or paper-lined muffin cups.  Bake at 375 degrees in a pre-heated oven for 25-30 minutes or until lightly browned.



Burger Buns

12 buns


1 cup whole wheat flour

5 cups unbleached white flour

1 1/2 teaspoon salt

2 Tablespoon yeast

2 Tablespoon butter, soften

3 Tablespoon honey

2 cups hot water


In a large mixing bowl mix whole wheat flour and 1 cup of white flour together and stir with the dry yeast and salt.  In another bowl, stir the honey into 2 cups of hot water.  Add the hot water/honey mixture gradually to the dry ingredients while stirring continuously.  Stir in the butter and beat for 2 minutes at a medium speed with mixer.  stir in 1 more cup of white flour, which will make a thicker batter; and beat for another 2 minutes on high speed with mixer.  Stir in 2 1/2 cups more of white flour or enough to make the dough stiff and should not cling to the sides of the bowl.  Turn onto a floured area and knead until smooth and elastic.  Place in a greased bowl and turn to coat the top.  Cover and let rise in a warm place til doubled in size about 30 minutes.  Punch down the dough and placed on an oiled area. Cut dough into 12 equal pieces.  Shape each piece into a smooth ball.  Place the dough balls on two greased baking sheets about 2'' apart.  Place back in your warm place and let rise until doubled about 30 minutes. Bake at 350 degrees for 15-20 minutes or until done.  Remove from pans and let cool on wire rack.
